A few weeks ago I had four shrimps left in my freezer, so naturally I decided to do a little experimenting. I was so pleasantly surprised with the outcome! Initially I just wanted a simple Paleo Coconut Shrimp Recipe. However, after thinking it through I decided it was too overdone and I wanted something different. I dug through the spice cabinet for something, anything that would make these little shrimpies just a bit more unique and there it was… the Chili Lime Seasoning from Trader Joe’s. DUH, Alyssa!
The flavor combinations in this recipe shouldn’t go together. Shrimp, chili, lime and coconut… in what world should those flavors ever make sense? That’s the great thing about cooking through. Flavors that usually wouldn’t make sense, do!
This Air Fried Chili Lime Coconut Shrimp recipe could not be easier. The ingredients are minimal, the prep time is basically non-existent and the cook time cannot be better. Perfect for the family and such a nice end of the summer dinner! Throw them on top of a salad or over a bed of rice with a side of veggies. Ingredients
Eggs
Almond Flour
Shredded Coconut
Trader Joe’s Chili Lime Seasoning
Instructions
- Clean and dry your shrimp
- Beat your eggs in a bowl
- Make your coating mixture in a dish or shallow bowl: almond flour + shredded coconut
- Dip your shrimps into the egg mixture & then coat in your coconut almond flour mixture
- Set aside and repeat for all shrimps
- After they’re all coated, sprinkle with your chili lime seasoning
- Air fry on 400 for 12 minutes flipping halfway through
- Let cool and enjoy!
