When the weather gets cooler, I love beginning my day with a warm bowl of oats. Unfortunately, stove-top oats take so long to make which is why I love overnight oats. When I was working in an office everyday, I ate overnight oats when I got into the office every morning. I would make 5 batches on Sunday and take one to go every single day. So convenient!
Now can we talk about the flavor of these oats??? If you love apple pie, you’re going to swoon over these Apple Pie Overnight Oats. I didn’t have apple pie spice on hand so I made my own and the flavor really came out wonderfully.
Ingredients Needed For Apple Pie Oats
Milk – I use almond milk but any milk will work here.
Apples – Choose your favorite apple type!
Yogurt – I used Lifeway’s plain kefir but Greek yogurt or regular yogurt would also work. You can use either vanilla or plain to keep the sugar content lower.
Maple Syrup – A sweetener is totally optional in this recipe!
Apple Pie Spice (I make my own in the below recipe but if you have Apple Pie Spice on hand that would be easier for you!)
Collagen – I use Ancient Nutrition’s Vanilla but plain would work as well! This ingredient is also optional and can be made without it.
How Long Do Overnight Oats Stay Fresh?
In an air tight container, overnight oats should last in the fridge for up to 5 days. However, the longer your oats soak, the softer they will be! Because they’ll stay for up to a week, overnight oats are perfect for meal prep. Prep 5 batches on Sunday and you’ll have breakfast ready to go for a whole week!Print
These Apple Pie Overnight Oats taste just like Apple Pie and are the most perfect start to a cool Fall morning!
1.5C Rolled Oats
1C Almond Milk
1/2C Plain Lifeway Kefir
3 Scoops Vanilla Collagen
1 Apples, chopped (use 1 apple to mix into the oats and 1 apple for the topping)
3 Tbsp Maple Syrup
1 teaspoon Vanilla Extract
1 teaspoon Cinnamon
1/4 teaspoon All Spice
1/4 teaspoon Nutmeg
1/4 teaspoon Ginger
1/4 teaspoon Cardamom
For the apple topping (optional)
1 Apple, chopped
1 teaspoon Cinnamon
1 Tbsp Coconut Sugar
- Combine your ingredients into a large container and refrigerate overnight.
- Mix your second chopped apple with 1 teaspoon cinnamon and 1 Tbsp coconut sugar and store in an air tight container.
- When you’re ready to eat, scoop your serving into a bowl and top with some of your cinnamon sugar apples, microwave for 1-1.5 minutes.
