These Baked Avocado Eggs will kick your brunch menu up 100 notches!
One of my favorite things about having this blog is being able to talk about food. I love when people come to me with an ingredient and ask “what can I do with this?” It gives me the opportunity to be creative and try new things but also to inspire people. And that’s pretty much the main reason I do this anyways. I don’t get paid to do this, this isn’t my job and I spend most of my free time working on this. And for what? To inspire. Everyone wants to change the world or help people… make a difference, you know? This is my way of changing the world, helping even just one person and making just the smallest difference.
Long story short, my best friend asked me “what can I do with avocados?” She was looking for something creative so I went to work and used Fusco as my taste tester. These Baked Avocado Eggs definitely passed his test.
They were pretty easy to make and kind of fun?! I felt like a chef especially because they look so professional. There’s just something awesome about when your food LOOKS good. It doesn’t even have to taste good! As long as it looks awesome I think to myself, “wow, I just made that!”
This recipe can be completely customized to your taste. You can omit the meat, add more meat, omit the cheese, use just egg whites, pretty much anything you want! Below I’ve included some of my favorite toppings…

This recipe is Keto friendly… if you’re into that. I’m not, but some are! So if you are, you should try these out! This recipe is one of those recipes that seems super gourmet and complicated, but it’s not. It’s actually really easy and can also be used for a meal prepped breakfast! You can also customize it to your liking. Try different toppings and get creative!
Ingredients
1 ripe avocado
2 eggs
Salt and Pepper
Optional Toppings:
Red pepper flakes
Everything but the bagel seasoning
Sliced turkey, ham or bacon
Instructions
- Pre-heat your oven to 400 degrees
- Cut your avocado in half, remove the pit and scoop some of the avocado meat out to make room for the eggs
- Place each half on a baking sheet covered in foil with the skin side down
- Crack your egg into each hole and sprinkle with salt and pepper + any other spices you want
- If you’re adding turkey or ham to your avocado, place that in the hole first and crack the egg over the slice of meat
- Bake for 15 minutes
- Pair with toast and enjoy!
