This Baked Pumpkin Spice Oatmeal is the perfect make-ahead breakfast for this Fall!

Baked oatmeal used to be one of my favorite breakfasts in college. I used to wake up early and make it before class. Baked oatmeal was also a common dinner for me during those years… I was pretty obsessed!

The first time I tried baking my oatmeal I totally messed up! I did not bake it enough and it was still kind of mushy. The second time around I did much better. I baked it a little bit longer and holy moly it came out just like a cake! Seriously, I was so pleasantly surprised. I love topping this oatmeal with chocolate chips. Is there anything better than combining pumpkin + chocolate?!

This recipe is perfect if you have some extra pumpkin puree in the fridge. Adding pumpkin to your normal oatmeal is a great way to not only add some extra Fall flavor but also add some extra nutrients into your diet. Pumpkin is rich in vitamin A, high in antioxidants and low in calorie.

Ingredients You’ll Need For Baked Pumpkin Spice Oatmeal:

Rolled Oats

Pumpkin Puree

Maple Syrup

Pumpkin Pie Spice

Eggs

Almond Milk

Vanilla Extract

Baking Powder

Salt

Collagen

Optional Toppings:

Chocolate Chips

Raisins

Description

This Baked Pumpkin Spice Oatmeal is the perfect make-ahead breakfast for this Fall! It keeps well in the fridge and goes wonderfully topped with yogurt and maple syrup or nut butter. 


Ingredients

Scale

2C Rolled Oats

1C Pumpkin Puree

3Tbsp Maple Syrup

1 teaspoon Pumpkin pie spice

1 Egg

1.5C Almond Milk

1/2 teaspoon Baking Powder

1 teaspoon Vanilla Extract

1/4 teaspoon Salt

4 Scoops Vanilla Collagen (Optional)

Optional Toppings:

Chocolate Chips

Raisins


Instructions

  1. Combine your ingredients and add to a greased baking pan that is small enough for a single serving
  2. Bake at 350 degrees for 25-30 minutes.
  3. Remove from the oven and top with your desired toppings.
  4. Enjoy!
  • Prep Time: 5 Minutes
  • Cook Time: 20-30 Minutes
