Since being home during quarantine, husband and I have been eating pancakes every single day. It started as a challange to use up all of the things we had a ton of excess of… like Kodiak Cakes! I’m pretty sure since March we’ve gone through 10 boxes of Kodiak Cakes. Now that it’s May and we’ve gone through pretty much all our pancake mix… it was time to start making some pancakes from scratch! These Banana Oat Blender Pancakes is an old recipe but definitely still a winner.
I first started making this recipe in college when I didn’t want to leave my room and walk to campus for dinner. These pancakes only call for 8 simple ingredients that I always used to have in our kitchen and take literally 10 minutes to make!
Not only are these pancakes gluten free but they’re full of complex carbs and PROTEIN, making them a great post-workout meal. I choose to add collagen to my pancakes for that extra punch of protein but you can use any protein you want that holds up will with cooking.

These Banana Oat Blender Pancakes are incredibly easy to make and the perfect way to use up those ripe bananas. This recipe is gluten-free (as long as you’re using gluten-free oats) and only calls for 8 ingredients!
1/2 Mashed Ripe Banana
1/2C Rolled Oats
1 Tbsp Almond Milk
1 teaspoon Vanilla Extract
Dash of Cinnamon
1 scoop collagen – I used Ancient Nutrition
1/2 teaspoon Baking Powder
Optional add ins: Blueberries, chocolate chips, banana coins
Optional toppings: Peanut Butter, almond butter, maple syrup
- Blend up your oats into a flour.
- Combine the rest of the ingredients in your blender.
- Make your pancakes as you would with any other batter.
- Prep Time: 5 Minutes
- Cook Time: 5 Minutes
