I’m a huge proponent of simple, minimal ingredient recipes. That is exactly what these Banana Oat Breakfast Bars recipe are! To be honest, I came up with this recipe on a whim. I wasn’t planning on baking, but I had ripe bananas and needed something to do with them. I had all of these ingredients already in my pantry and you probably do too!

I added chia seeds to this recipe mostly because I had them in my pantry but also because they’re super nutritious! Chia seeds are an amazing source of omega-3 fatty acids. They’re rich in antioxidants, and they provide fiber, iron, and calcium.
How to make Banana Oat Breakfast Bars
- Mash the bananas
- Add your oats, vanilla, cinnamon, oats and 1/2 of the chocolate chips
- Mix until well combines
- Pour into a greased or parchment paper lined baking pan
- Bake for 20 minutes at 350
- Cool completely and enjoy!

These Banana Oat Breakfast Bars are perfect for your breakfast, mid-day snack or dessert! They’re adult and child friendly, nut free and you only need 6 simple ingredients to make them.
Ingredients
4 rips bananas
1.5C rolled oats
1 teaspoon cinnamon
2 teaspoons chia seeds
1 teaspoon vanilla
1/2 C Chocolate chips (optional)
Instructions
- Pre-heat your oven to 350
- Mash up the bananas and combine with the rest of the ingredients including half of the chocolate chips
- Pour mixture into a greased or parchment paper lined 8×8 baking dish or pan and top with the rest of the chocolate chips (optional)
- Bake for 20 minutes or until the bars are golden brown
- Prep Time: 10 minutes
- Cook Time: 15 minutes
