Description
This Blueberry Crumble Bar recipe is super low in sugar, warm and comforting but refreshing all at the same time! It’s the perfect start to baking season when you want to start baking but you don’t want to reach for the apples yet. Top with some vanilla ice cream and enjoy!
Ingredients
For The Crust and Crumble:
2 cups almond flour
2 cups rolled oats
6 Tablespoons melted coconut oil
6 Tablespoons maple syrup (you may be able to cut down on this, check to see how moist or dry the mixture is)
Splash of vanilla extract
Pinch of sea salt
Crushed Pecans
Make the jam:
1.5–2C cup blueberries
The juice of 1 lemon
1 Tablespoon maple syrup
1 teaspoon chia seeds
Instructions
- Mix all your ingredients to get the crust
- Once combined, press 3/4 of the mixture into a greased baking dish
- Bake for 10 minutes at 350
- Add crushed nuts (I used pecans) to the 1/4 of the mixture that you saved. This will be the crumble part.
- While your crust bakes, add your jam ingredients (except the chia seeds) to a sauce pot or pan and mix/mash until well combined and no lumps.
- Take the crust out of the oven and add the blueberry chia seed jam. Spread evenly over crust.
- Sprinkle the remaining crust + nut mixture over the chia seed jam.
- Bake for another 30 minuets at 350
- Cut into squares and enjoy!
