Butterscotch Chocolate Chip Cookies

These Butterscotch Chocolate Chip Cookies are soft, gooey, and loaded with butterscotch and chocolate chips. They’re the perfect holiday cookie that everyone will love! Make them a couple of days ahead to save yourself some holiday stress this year.

Ingredients for Butterscotch Chocolate Chip Cookies

Flour

Eggs

Unsalted Butter, Browned

Packed Brown Sugar

Vanilla

Salt

Baking Soda

How to make this cookie recipe

  1. Start by preheating the oven to 350
  2. Cover a baking sheet with parchment paper.
  3. In a small saucepan, add 1C of butter and simmer until browned. Let cool.
  4. In a large bowl, mix together the brown butter, sugar, and eggs.
  5. Add the vanilla, salt, and baking soda.
  6. Add the flour, butterscotch chips, and chocolate chips until well combined. Do not over mix!
  7. Chill the cookie dough for 15 minutes. Scoop onto a baking sheet and bake each cookie for 10-12 minutes, depending on how you like your cookies!

What is brown butter?

Brown butter is simply butter, simmered until it turns brown. It’s melted butter with a nutty and bold flavor. Brown butter makes all the difference in a cookie. Who knew that something as simple as simmering butter could change the entire flavor profile of a cookie?!

How to brown butter

Browning butter is pretty quick and easy! Place your butter in a pan and turn the heat to medium. Begin stirring to move the butter around as it melts. Once melted, the butter will begin to foam and sizzle. Make sure to keep stirring. In about 5-8 minutes, this will happen super quickly, the butter will turn golden brown. The foam will subside and little bits will form at the bottom of the pan. The butter will smell intensely buttery, nutty, and rich!
