One of my favorite after dinner dessert are Eating Evolved’s Keto cups. They’re the perfect level of sweetness and they satisfy my daily chocolate craving. I love their classic unsweetened formula that has no sugar and is only 130 calories! The perfect daily treat. I love them so much that I decided I needed to try and make my own. Alas… Cashew Cream Cups!
A few days ago I made a Maple Vanilla Cashew Cream which is basically just nut butter not blended enough so it didn’t liquefy. If you’ve ever made your own nut butter, the process takes a while because as the nuts get warm, they release natural oils which helps to break them down into a liquid. I kept the mixture thick, added maple syrup, vanilla and sea salt and used that to stuff my chocolate cups!
Nothing makes me happy like a minimal ingredient recipe does. There are so many different types of candies and snacks on the shelves in the stores and they’re all made with so many ingredients. Why? These Cashew Cream Cups are made with just 5 real, whole food ingredients and they taste amazing! It’s recipes like these that prove you can eat better and the food will taste just as good. These Cashew Cream Cups remind me of Eating Evolved’s Keto cups which are literally my favorite. They’re made with just 5 ingredients and are the perfect treat to satisfy your sweet tooth!
Ingredients
1 Chocolate bar, any kind you like! Use dairy free to keep it vegan.
1 Tbsp Coconut oil

Silicone baking cups
Instructions
- Make the Maple Vanilla Cashew Cream according to the directions.
- Arrange your silicone baking cups on a flat dish or tray that will fit in your freezer.
- Melt your chocolate bar and coconut oil (I used the microwave).
- Cover the bottom of the silicone cups with the melted chocolate (about 1 tablespoon) and then freeze for about 10-15 minutes until solid.
- Once frozen, spoon the cashew cream mixture into the cups and spread evenly.
- Cover the cashew cream with more melted chocolate & put back into the freezer.
- Once frozen, enjoy! Store in the fridge or the freezer for a sweet snack.
