If you know me at all, you know I LOVE overnight oats. It’s such a simple breakfast that you can prep at the beginning of the week and it never gets old. Sometimes variety is nice though and that is where these Chocolate Peanut Butter Overnight Oats come in! Not my usual everyday recipe but it’s so nice to mix things up.

No joke, this Overnight Oats recipe taste like brownie batter. Yup, I said it. Bold statement but I stand by it! They’re thick, creamy and so so chocolatey! I swear when you’re eating these oats, you’ll think you’re eating dessert. Such a nice treat to start your day with!

What you will need for your Chocolate Peanut Butter Overnight Oats:
Rolled Oats
Almond Milk
Chia Seeds
Peanut Powder
Collagen (optional – I used Chocolate Ancient Nutrition) or Unsweetened Cocoa Powder
Maple Syrup
Vanilla Extract
Cinnamon
Salt

Overnight oats are so incredibly easy to make. What I do is make 5 servings on Sunday so that throughout the week I can just grab them and go. I set up 5 containers on the counter, get out all of my ingredients and go down the line to add each ingredient to the containers. This takes about 10 minutes total and that 10 minutes saves me so much time during the week!

Ingredients
1C Rolled Oats oats
1C Unsweetened almond milk
1 Tbsp Chia seeds
2 Tbsp Peanut butter powder
2 scoops chocolate collagen (optional, I use Ancient Nutrition)
If you don’t have chocolate collagen or don’t want to use collagen at all, add 2 Tbsp Cocoa Powder
1 Tbsp Maple syrup
1 tsp Vanilla extract
1 tsp Cinnamon
Pinch of salt
Instructions
- Add all your ingredients into a container with a lid
- Mix well
- Refrigerate overnight
- Microwave in the morning & enjoy!
Notes
If you don’t want your oats thick, in the morning before warming them up, add a bit of almond milk and mix!
