When I was regularly commuting an hour and a half into Chicago for work… I was leaving my house at 7AM on the dot. I was also working out in the morning which didn’t leave a lot of time in the morning for silly things like breakfast! That is why every Sunday I prepped 5 containers of overnight oats to take with me to work Monday through Friday. As much as I love overnight oats, I used to get tired of the same thing over and over. That is why I started making fun overnight oats concoctions like this one!

Ingredients
Rolled Oats
Almond Milk
Espresso
Cinnamon
Vanilla
Maple Syrup
Whipped Cream – optional

Instructions
I say this often but one of my favorite things about overnight oats is how easy they are to make. All you need is a container, a spoon, rolled oats, almond milk, and whatever flavors and toppings you want to add.
- In a container add the oats, almond milk, espresso, cinnamon, vanilla, and maple syrup.
- Mix well.
- Put in the refrigerator overnight and pop in the microwave in the morning for about a minute.
- Top with whipped cream (optional) and enjoy!
Storage
Store in airtight containers for up to 5 days.

1C Almond Milk
1 Shot Espresso
2 Tbsp Maple Syrup
1/2 teaspoon Vanilla
1/2 teaspoon Cinnamon

- Mix well.
- Put in the refrigerator overnight and pop in the microwave in the morning for about a minute.
