If I had to choose one baked good to make and eat for the rest of my life, it would probably be banana bread. I love all the things you can do with a good banana bread recipe. You can make a loaf, muffins and even donuts. Just like these Collagen Banana Bread Donuts! You can add cinnamon, chocolate chips, collagen and even walnuts. There are so many spins you can put on banana bread that each time you make it, it will come out just a little bit different.
Lately, I’ve been prepping a healthy baked good along with my regular meal prep. I do this for times when I want something sweet but don’t want to grab something unhealthy. I’ve also been adding collagen to my baked goods to give them a bit of a protein boost. If I’m going to use the baked good as a daily snack, I like there to be some protein in them so I get a food mix of protein, fats and carbs.
These Collagen Banana Bread Donuts are gluten-free and grain free. Instead of using regular flour, I used coconut flour! Coconut flour is a great low-carb flour substitution. It’s rich in fiber which helps to keep you full and gives your baked goods a great flavor! When baking with coconut flour, a little goes a long way. Coconut flour is very dense and absorbs a lot of liquid so be careful if you’re trying to substitute with a different flour!
3 Spotted bananas, mashed
1/3 Cup nut butter of choice, I used almond this time
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3C Coconut flour
1/4 teaspoon salt
3 tablespoon coconut oil
4 scoops Collagen
1 teaspoon Vanilla
Chocolate chips (Optional but highly recommended)
- Preheat oven to 350 degrees
- Combine your ingredients and pour your batter into a creased donut pan
- Bake for 15-17 minutes until the tops are a golden brown and a toothpick comes out clean
- Store in the fridge for up to a week!
