Double Chocolate Chickpea Cookies

These Double Chocolate Chip Chickpea Cookies are some of the best cookies I’ve ever made and eaten. They’re incredibly easy and pretty dang healthy considering the main ingredient is CHICKPEA. I first made these cookies in college. I still remember making my parents try them before they knew what was in them. Once I confirmed that they thought they were good, I told them and they could not believe it!

This recipe is pretty old. It was first published back in 2014! I recently decided that it deserved a new blog write up and a fresh set of pictures. In order to do that, I had to re-make these Double Chocolate Chip Chickpea Cookies. My husband got to try them for the first time and again, before telling him what was in them… I had him eat one! His first impressions was “wow”. Once I told him what was in them he straight up didn’t believe me. I’m not kidding! He told me I was lying and I had to show him the empty can of chickpeas for him to finally believe me. Honestly, he couldn’t shut up about them for the rest of the week! Since we ate them all, he’s been asking that I make them again!

Ingredients you will need to make Double Chocolate Chickpea Cookies

Chickpeas also known as garbanzo beans

Peanut Butter

Almond Milk

Maple Syrup

Cocoa Powder

Vanilla

Baking Powder

Chocolate Chips

Food processor or blender

Description

I created this cookie recipe back in college and everyone thought I was crazy! I remember giving one of these cookies to my mom and after I told her what was in them she was shocked! This time around, I handed one to husband and he is OBSESSED with these cookies.


Ingredients

Scale

1 x 14oz can of Chickpeas (Rinsed, dried and peeled)

1/2C Peanut Butter

1/4C Almond Milk

1/4C Maple Syrup

1/2C Cocoa Powder

1 teaspoon Vanilla

1/2 teaspoon Baking Powder

1/2C Chocolate Chips


Instructions

  1. Pre-heat your oven to 350
  2. Combine your ingredients, minus the chocolate chips, in a food processor
  3. Once well combined, add your chocolate chips and pulse a few times just to combine the chocolate chips into the batter. 
  4. Cover a cookie sheet with parchment paper and use a cookie scoop to scoop your dough balls onto the parchment paper. Shape them into cookies and press a few more chocolate chips on top.
  5. Bake for 10-12 minutes
  • Prep Time: 5 Minutes
  • Cook Time: 10-12 Minutes

    I can’t see anywhere how big a can of chickpeas to use. The 28 oz or 14 oz?
