I created this cookie recipe back in college and everyone thought I was crazy! I remember giving one of these cookies to my mom and after I told her what was in them she was shocked! This time around, I handed one to husband and he is OBSESSED with these cookies.
1 x 14oz can of Chickpeas (Rinsed, dried and peeled)
1/2C Peanut Butter
1/4C Almond Milk
1/4C Maple Syrup
1/2C Cocoa Powder
1 teaspoon Vanilla
1/2 teaspoon Baking Powder
1/2C Chocolate Chips
- Pre-heat your oven to 350
- Combine your ingredients, minus the chocolate chips, in a food processor
- Once well combined, add your chocolate chips and pulse a few times just to combine the chocolate chips into the batter.
- Cover a cookie sheet with parchment paper and use a cookie scoop to scoop your dough balls onto the parchment paper. Shape them into cookies and press a few more chocolate chips on top.
- Bake for 10-12 minutes
- Prep Time: 5 Minutes
- Cook Time: 10-12 Minutes
