I don’t know about ya’ll but I really cannot believe how close the holidays are. Christmas trees are up and lit, stockings are hung and stuffed, there are twinkling lights on all the houses in our neighborhood and everyone is baking cookies!
This cookie recipe is a new favorite in our household. Husband LOVES anything chocolate + peppermint. Peppermint bark is his favorite holiday treat and when I surprised him with these cookies, he was so excited! He has been eating one every night since I made them so I guess you can say he likes them!

This recipe is insanely easy to make. I love a dough that comes together quickly and doesn’t take a lot of effort. Nothing makes me not want to bake more than realizing you need 3 different bowls and 3 hours to refrigerate a dough.

These Double Chocolate Peppermint Cookies are chocolatey, melt-in-your-mouth and incredibly easy to make! They’re perfect for your holiday dessert table and are such a crowd pleaser.
Ingredients
3/4C Butter, softened to room temperature
1C Coconut Sugar
1 Egg
1 teaspoon Vanilla
1/2 teaspoon Peppermint Extract
3/4C Flour
1/2C Cocoa Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/2C Chocolate Chunks
Crushed Candy Cane for on top (optional)
Instructions
- Pre-heat your oven to 350
- Whip your room temp butter + sugar and then combine the rest of your wet ingredients
- Add the dry ingredients to the wet and fold to combine
- Refrigerate your dough for about 10 minutes as it will be sticky. This will help you handle the dough better!
- Scoop, roll and flatten/shape a bit on your cookie sheet
- Remove from the oven and let cool before moving. If you move the cookie while it’s hot, it will fall apart in your hand!
