This Quick and Easy Double Chocolate Snack Cake is a one-bowl recipe for any time you’re craving chocolate cake! Although this recipe has minimal sugar, it tastes like a decadent chocolate cake. Slather with frosting and I swear you wouldn’t know the difference.
What is a snack cake?
This was my first question when I saw the term “snack cake” on Instagram. I actually read up on what a snack cake should be defined as and found an article that debated the difference between a “snack cake” and a “snacking cake”… according to some, there is no difference. According to others, it has to do with the time of day the cake is baked. A “snack cake” is defined as a cake that is baked in the morning and eaten later on. A “snacking cake” is defined as a a cake that is baked and eaten in the afternoon. Honestly, none of this knowledge really mattered to me. The one thing I took out of my research is a snack cake was almost like a Texas sheet cake with little to no icing and could be picked up and eaten with your hands.

Ripe Bananas
Olive Oil
Egg
Vanilla Extract
Coconut Sugar
Baking Powder
Baking Soda
Salt
Cocoa Powder

I added chocolate chips and marshmallows to my version but you can add whatever you want to yours! Here are a few ideas:

This Double Chocolate Snack Cake is moist, airy and spongy! It’s the perfect low-sugar mid-day snack but I kid you not it tastes like cake.
Ingredients
2 Ripe Bananas
1/3C Olive Oil
1 Egg
2 teaspoons Vanilla Extract
3 Tbsp Coconut Sugar
2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon salt
1/2C Unsweetened Cocoa Powder
1C Flour
Optional add ins:
1/2C Chocolate Chips
1/2C Mini Marshmallows
Instructions
- Pre-heat oven to 350
- Combine your wet ingredients and once combined, add your dry ingredients. Mix until just combined and then add your mix-ins!
- Pour into a greased or parchment lined 8×8 pan and bake for 30 minutes
- Remove, let cool and enjoy!
- Prep Time: 10 Minutes
- Cook Time: 30 Minutes
