I am always searching for a way to mix up our morning routine. The last thing I ever want for husband and myself is to fall into a rut and stop enjoying our meals! We are both pretty health conscious (me definitely more than him but I tend to keep him on track 🙂 ) and a huge part of sticking to that for me is keeping things different and exciting.
For example, there was a time when I ate overnight oats every morning for breakfast for about a year… I swore I’d never get tired of them but I did and I haven’t eaten overnight oats in at least 6 months now! My current obsession is pancakes but I’ve been forcing myself to switch it up so that I don’t get tired of them. So ever couple of days I make French Toast or one of these hearty breakfast burritos!
To be honest, I prefer a sweet breakfast so most of the time when I eat eggs, it’s for lunch! I’m a big breakfast for lunch type of gal. I really do love all breakfast foods and could eat any type of breakfast for lunch and dinner any day! I’ve been consistently making one of these bacon and potato breakfast burritos for lunch when I have leftover potatoes and they’ve been the perfect hearty lunch to hold me over until dinner time.

Bacon
Shredded Cheddar Cheese
Everything but the bagel seasoning
Potatoes,
Burrito sized tortilla

Ingredients
2 Eggs
2 Strips of Bacon
1/4C Shredded Cheddar Cheese
1 Medium Sized Potato or 1C leftover potatoes
2 Burrito sized Tortillas
Instructions
- Start by scrambling your eggs, frying up your bacon and cooking your potato if you don’t have any leftover!
- The easiest way to cook your potato quickly would be to microwave it for 1/2 of its cooking time, chopping it up and cooking it the rest of the way in a frying pan.
- Once your ingredients are ready, lay your tortilla on a flat surface and begin stuffing.
- Tightly roll and lay seam side down in a frying pan over medium heat to seal it shut.
- Enjoy with ketchup or hot sauce.
- Prep Time: 10 Minutes
- Cook Time: 5 Minutes

This sounds so good! When you cook your potato in the microwave, how long should you cook it? I’ve never made one in the microwave. You also do not mention any seasonings for it. Do you season yours before putting it in the burrito?

Use the potato setting! That’s what I did 🙂 and you can but you don’t need to! Mixed with everything else it’s pretty flavorful enough.
