These Easy Eggs in a Biscuit are easy to make and perfect for meal prep! They’re all the great things about a sit down breakfast wrapped into one hand-held breakfast to go.
This may be my favorite breakfast recipe yet and husband would definitely agree. I made these right before my in-laws came for a visit and they hate them 2 mornings in a row! These received high praise which is just another reason why you should make them too!
I love that you can meal prep them and they’ll last a couple of days in the fridge. All you have to do is pop them into a toaster oven and either toast them up or bake them for a couple of minutes so that they’re hot when you cut into them.
What are eggs in a biscuit?
Eggs in a biscuit are literally just that… eggs baked into a biscuit! These are similar to eggs in a hole but instead of using bread we are using buttery, flaky biscuits! The cool thing about this recipe is they seem like they would take a lot of work and at first glance. Truthfully, they look kind of gourmet… But in reality they were so easy to throw together and you only need 5 ingredients and about 30 minutes to make them.
Another great thing about this recipe is you can customize them how you would like. If you’re not a big fan of bacon, you can use ham or omit the meat completely. If you’re looking to make this recipe dairy free, omit the cheese or instead of cheddar cheese, you can use goat cheese if you’re feeling fancy! You can even sneak a vegetable into these breakfast bombs. If you’re going to omit the bacon, try layering in some tomatoes or chopped peppers.

Ingredients
1 Can of Biscuits (I used Pillsbury)
8 Eggs
4 Slices of Bacon cut in half
Shredded Cheese (however much you’d like)
Everything But The Bagel Seasoning
Instructions
- Pre-heat your oven to 350 and grease a cupcake or muffin tin well
- Press the biscuits into 8 of the wells
- Lay 1/2 a slice of bacon into each
- Crack an egg into each (if you’re using a cupcake tin you may have some overflow)
- Sprinkle some cheese and EBTBS on top of each and bake at 350 for 20-25 minutes or until your egg reaches your desired consistancy
- Prep Time: 10 Minutes
- Cook Time: 20-25 Minutes
