Easy Southwest Quesadillas loaded with beans, corn, bell pepper, ground beef, spices and melty cheese served with salsa, sour cream, and avocado. This recipe comes together super quickly and is perfect for lunch. If you’re looking for a meatless Monday recipe, try omitting the meat and adding in extra vegetables!
I just had a baby in May so quick and easy recipes are my best friend lately. If you’re a mom, you know that there is not much time for eating during the day. I love that I can make this mixture on the weekend and use it in my lunches throughout the week. Above all, this recipe is packed with protein and fats plus carbs leaving me full all afternoon long.
This recipe is 100% inspired by my top pregnancy craving which was lots and lots of quesadillas + cheese. It also happens to pair extremely well with this Fresh Blueberry Lemonade Mojito for those of you who can drink!
Ingredients
- Tortilla of your choosing
- Ground Beef
- Corn
- Black Beans
- Onion
- Green Pepper
- Shredded Cheese
- Taco Seasoning
- Olive oil
Optional Toppings:
- Avocado
- Salsa
- Sour Cream

Instructions
- Make your filling by heating a pan with oil and adding the onion and pepper.
- Let those sweat a bit and then add the ground beef.
- Once the ground beef is mostly cooked, add the taco seasoning, black beans, and corn.
- Continue to sauté the mixture until meat is fully cooked.
- Clean out your pan, add more oil and lay a tortilla in the pan. You’ll need a large pan!
- Add a layer of cheese and then layer in the mixture.
- Add another layer of cheese and then top with another tortilla.
- Heat the quesadilla until the one side is nice and gold + the cheese is melted.
- Carefully flip and toast the other side.
- Cut and enjoy!
Hint: If you don’t feel comfortable flipping the entire quesadilla try adding one tortilla in the pan, adding cheese and mixture to half of it and then folding it in half. It will be much easier to cook and flip!
Substitutions
To make this recipe vegetarian try adding the below instead of ground beef:
- Pinto beans
- Chickpeas
- Rice
