Southwest Beef Quesadillas cut into triangles

Easy Southwest Quesadillas

Ingredients

Tortillas

1 LB Ground Beef

1 Can Corn

1 Can Black Beans

1 Onion

1 Green Pepper

Shredded Cheese – measure with your heart

2 Tbsp Taco Seasoning

2 Tbsp Olive Oil


Instructions

  • Make your filling by heating a pan with oil and adding the onion and pepper.
  • Let those sweat a bit and then add the ground beef.
  • Once that is mostly cooked add the taco seasoning, black beans, and corn.
  • Continue to sauté until meat is fully cooked.
  • Clean out your pan, add more oil and lay a tortilla in the pan. You’ll need a large pan!
  • add a layer of cheese and then layer in the mixture.
  • Add another layer of cheese and then top with another tortilla.
  • Heat until the one side is nice and gold + the cheese is melted. 
  • Carefully flip and toast the other side.
  • Cut and enjoy!
