They have that classic cake batter flavor with a little bit of a twist (hint hint, it’s almond extract)! This recipe is simple, easy and perfect for any occasion but especially a birthday!
Yay or nay for chocolate chips + funfetti? To be honest I prefer chocolate chips in any cookie I eat so it’s a huge YAY for me. Traditionally, chocolate chips don’t go in funfetti cookies but sometimes tradition is everything and other times… tradition can go to hell in a handbasket 🙂 Aggressive I know but I really love chocolate chips!

How to make Funfetti Birthday Cookies
This dough will end up being a little sticky but don’t fret… that’s normal! I tried baking these cookies with the dough at room temperature and chilled however it didn’t really make a difference in how they came out. After your dough is mixed, use a scooper to scoop out a bit and roll into a ball using your hands. I suggest shaping the dough into more of a cookie form rather than baking as a dough ball. Shaping the dough will help the cookie spread and form as it bakes.

1 Egg (room temperature)
1/2C Butter, softened to room temperature (THIS IS IMPORTANT!)
1/2C Coconut Sugar
1 teaspoon Vanilla Extract
1 teaspoon Almond Extract
1/4 teaspoon Salt
1 teaspoon Baking Soda
1/2C Chocolate Chips (optional)
- Pre-heat your oven to 350
- Scoop, roll and flatten your cookie dough balls
- Bake for 10 minutes and let cool fully before digging in
