Gluten-Free Apple Pie Bars

These Gluten-Free Apple Pie Bars are a deliciously easy dessert made with a hearty oatmeal crust. They’re gluten-free and can easily be made vegan!

I modeled these bars after my Blueberry Crumble Bars and they did not disappoint! We went apple picking in October and I brought home a nice big bag of fresh and crisp apples. Is it just me or do apples taste so much better when you pick them off the tree yourself?

Naturally, I immediately began to think about what I was going to bake with them. Apple pie was never really a big deal in my house growing up. My very Italian family was more about pastries and Italian cookies rather than cakes and pies. However, husband LOVES a good apple pie so I made a promise to myself that I would learn how to bake a great pie! I haven’t nailed it YET but these Gluten-Free Apple Pie Bars are a start.

Gluten-Free Apple Pie Bar Crust & Crumble Ingredients

Oat Flour

Oats

Cinnamon

Butter or Coconut Oil

Maple Syrup

Coconut Sugar

Vanilla

Baking Soda

Sea Salt

This dessert honestly gets better the more it sits in the pan and I stored mine in the fridge which I think helped solidify all the ingredients together! Before eating a slice, I microwaved it for 30 seconds and topped with whipped cream!

Description

These Gluten-Free Apple Pie Bars are easy to make, delicious as hell and all the flavor of an apple pie in a hand held slice. 


Ingredients

Scale

For the crust/crumble:

2C Oat Flour

2C Oats

1 teaspoon Cinnamon

6 Tbsp Butter or Coconut Oil if you’d like these to be vegan

6 Tbsp Maple Syrup

1/2C Coconut Sugar

1 teaspoon Vanilla

1/4 teaspoon Baking Soda

Pinch of Sea Salt

For the filling:

3 Apples, peeled and thinly sliced

1 Tbsp Butter or coconut oil if you’d like these to be vegan

2 Tbsp Maple Syrup

2 teaspoons Corn Starch

1 teaspoon Cinnamon

1 teaspoon Vanilla

Pinch of Sea Salt


Instructions

  1. Pre-heat your oven to 350
  2. Combine the ingredients for your crust/crumble and press 2/3 of the mixture into an 8×8 baking pan that is covered in parchment paper and greased.
  3. Place the remaining mixture for the crumble in the fridge.
  4. Peel and slice your apples. In a large pan or pot, melt the butter over medium heat and then add your apples, maple syrup, cinnamon and sea salt. Cook your apples at medium to low heat for 5 minutes.
  5. After 5 minutes, add the vanilla and corn starch and cook for another 3 minutes.
  6. When the filling is done cooking, spread evenly over the crust.
  7. Crumble the remaining crust/crumble mixture over the filling as evenly as possible. 
  8. Bake for 30 minutes.
  9. Remove from the oven, let cool and enjoy with ice cream!

  • Cook Time: 30 Minutes
