October has been the month of pumpkin recipes and I’m not mad about it! These Gluten-Free Pumpkin Oat Cookies are not just gluten-free but dairy-free as well. They’re fluffy, cozy and taste just like Fall! They’ll even make your house smell wonderful which is another win in my book!
These cookies are so incredibly hearty, chewy and cozy… all of the things that make Fall amazing! To keep these cookies gluten-free, I made my own oat flour using gluten-free oats. Making your own oat flour is so much cheaper than buying it and it’s so simple. All you have to do is throw your oats in the blender and BLEND. You can always grind up more than you need and store the extra for when you need to make more cookies. I also threw some rolled oats into the batter as well for a little texture.
I first made these cookies in college and recently decided they needed a makeover. They got a re-test and re-shoot them and they’re just as delicious as I remember!
Ingredients to make Gluten Free Pumpkin Oat Cookies:
Oat Flour
Eggs
Pumpkin Puree
Coconut Sugar
Coconut Oil
Baking Powder
Baking Soda
Pumpkin Pie Spice
Cinnamon
Nutmeg
Vanilla
Chocolate Chips (optional but always recommended!)

These Gluten-Free Pumpkin Oat Cookies are chewy, cozy and super hearty. Huge plus: they’ll make your entire house smell like Fall!
Ingredients
1/2C Pumpkin Puree
2 Eggs
1/4C Coconut Sugar
1/4C Coconut Oil
1 + 1/2C Oat Flour
1C Rolled Oats
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Pumpkin Pie Spice
1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1 teaspoon Vanilla
Chocolate Chips (as many as you’d like!)
Instructions
- Preheat your oven to 350
- Combine your ingredients (dry first and then add your wet) and scoop your cookies onto a parchment paper covered baking sheet.
- Use a fork to press the cookie dough down and shape them a bit. They won’t spread as they bake!
- Bake for 12 Minutes
- Prep Time: 10 Minutes
- Cook Time: 12 Minutes
