There are so many glorious flavors in this dish. Between the perfectly cooked chicken, green onions, sesame oil and soy sauce, every bite is an explosion of flavor! I also love the addition of the scrambled egg. It adds texture, flavor and protein.
This dish is perfect for an easy mid-week dinner when you don’t have a lot of time or meal prep this dish for lunches! Like traditional takeout, I think it’s better the next day.
Ingredients for Healthier Chicken Fried Rice:
Onion
Garlic
Chicken
Butter
Peas and Carrots
Sesame Oil
Soy Sauce
Eggs
VeeTee Rice

One thing I love about this healthier chicken fried rice recipe is that it doesn’t take a lot of ingredients and most of them I usually always have in my house anyways.
I always keep chicken in my freezer and canned vegetables in my pantry. Additionally, I usually ALWAYS have eggs but if I didn’t, they could be omitted. I always keep onions and garlic on my counter, soy sauce and butter in my fridge and a variety of oils in my pantry including sesame oil. Sesame oil has such a different flavor and a little goes a long way! When I want to switch things up, I use sesame oil. Lastly, I always always always keep rice in the house, in a few different forms! I keep frozen, microwavable rice in the freezer. Microwavable rice in the pantry as well as good ole fashion white and brown rice in the pantry. Obviously I rather use the rice that takes 3 minutes to make but just in case I run out of that, I have the OG there in the pantry too.

This Healthier Chicken Fried Rice is tasty, healthier than takeout and kind of better if I do say so myself!
Ingredients
1/2 Yellow Onion
3 Gloves Garlic
1lb Chicken Tenderloin
2 Tbsp Butter
Peas and Carrots – I used a can of mixed peas and carrots but you can also use frozen
1 Tbsp Sesame Oil
3 Tbsp Soy Sauce
2 Eggs
VeeTee Rice Thai Jasmine Rice
Green Onion
Salt and Pepper
Instructions
- Heat a skillet with 1 Tbsp of butter and add your chicken tenders. Sprinkle with some salt and pepper. Do not flip them until they have a crispy golden crust. Total time to cook should be about 6-7 minutes. Remove from heat and set aside.
- Add 1 Tbsp of butter to the same pan along with your chopped onion and sliced garlic. Sauté until translucent.
- Add your veggies and sauté for a couple minutes (about 3) and then add your chicken back in and mix to combine.
- Move the mixture to one side of the pan and crack the 2 eggs into the pan. Scramble and mix into the rest of the mixture.
- Add your rice & mix.
- Add your sesame oil and soy sauce and mix.
- Top with your sliced green onion.
- Serve and enjoy or separate into lunches and enjoy throughout the week!
