This fresh and colorful Italian Pasta Salad has all the goods including cheese, vegetables, salami and your favorite vinaigrette. Perfect for meal prep, a week night dinner or a get together with family or friends!

I had a baby about 3 months ago so quick and easy lunches are the name of the game for me. I’ve really been enjoying meal prepping big batches of anything so I can just toss something in a bowl and eat while I fold laundry, write blog posts OR relax on the couch!

Ingredients
This Pasta Salad is packed full of delicious ingredients to keep you full throughout the day including:
Brown Rice Pasta
Mozzarella Pearls
Dried Salami
Cucumber
Black Olives
Red Onion
Peperoncini
Red Wine Vinaigrette

Instructions
- Boil salted water, add the pasta of your choosing, and cook according to the directions on the package
- Once done, drain the water and rinse with cold water
- Chop the red onion, dried salami, and peperoncini
- In a large bowl add the pasta, mozzarella, salami, cucumber, olives, onion, and peperoncini
- Mix the ingredients together and toss with the red wine vinaigrette
Variations
Switch this recipe up based on your specific tastes:
- Spicy – add chili pepper flakes, chili oil, or Calabrian chili’s
- Deluxe – add chicken, shrimp, or steak
- Kid friendly – omit the hot peppers, maybe even the red onion and add some vegetables your kids like (broccoli, zucchini, eggplant)
