Pasta Salad with red wine vinaigrette

1 Bag Brown Rice Pasta

1/2 Red Onion

1 Can Black Olives

Peperoncini, as many as you’d like

1/2 Cucumber

1/2C Dried Salami

1C Mozzarella Pearls

Red Wine Vinaigrette, enough to coat everything 


  • Boil salted water, add the pasta of your choosing, and cook according to the directions on the package
  • Once done, drain the water and rinse with cold water
  • Chop the red onion, dried salami, and peperoncini
  • In a large bowl add the pasta, mozzarella, salami, cucumber, olives, onion, and peperoncini
  • Mix the ingredients together and toss with the red wine vinaigrette 
  • Prep Time: 10 Minutes
  • Cook Time: 20 Minutes
