When you wake up craving fluffy pancakes… you make yourself some fluffy pancakes! Lemon Almond Blueberry Poppy Seed Pancakes to be exact. Wow is that a mouthful or what? I’m usually a huge chocolate chip pancake fan. Chocolate makes ANYTHING better, I’m a huge believer in that! However, I was craving something a little different which doesn’t happen very often. So I went with it and ended up with these Lemon Almond Blueberry Poppy Seed Pancakes. Let me tell you… these pancakes did not disappoint! Lemon + blueberry has been one of my favorite combinations lately and adding almond into the mix just took it to the next level! Seriously, you need to try it.
This combination of flavors would work in so many different aspects: Muffins, a loaf, cookies… you name it! However, let’s focus on the pancakes first. This batter can be made as waffles as well but most of the time I’m a pancake > waffle person. This recipe is super easy because I used a pancake mix as the base and added in my extras to make it my own. You can use any kind of base you have or make your own from scratch!
When making pancakes, the most important thing is that ugly first pancake! I’m not a proponent of throwing out the first pancake, that’s just wasteful. However I will put it at the bottom of my stack because it just never looks as good as the others! Does anyone know why this happens?????
The Easiest Lemon Almond Blueberry Poppy Seed Pancakes

This recipe is super easy because all I had to do was follow the directions on the back of the Manitoba Million Co. package for the pancake base and then I was able to add in all the extra ingredients I wanted! These pancakes came out thick, fluffy and the flavor combo is perfect for the summer!
Ingredients
Pancake Base Ingredients:
1C Manitoba Milling Co. Whole Grain Flax Pancake Mix
1C Almond Milk
1 Egg
1 Tablespoon melted Coconut Oil
Extra Ingredients for the Lemond Almond Blueberry Poppy Seed Pancakes:
1 Teaspoon Almond Extract
1 Tablespoon Poppy Seeds
Zest of 1 Lemon
1/2C Fresh Blueberries
Instructions
- Heat a pan sprayed with Pam spray
- Combine your ingredients and cook on the stove top until golden brown
- Enjoy with maple syrup!
