Last Saturday was a bit cooler which meant it was safe to turn on the oven! It’s a bit hard for me to bake in the Summer mostly because I live with my parents and they don’t exactly appreciate when I turn the oven on in 90 degree weather. I don’t blame them! So I try to be respectful and wait for the cooler days as well as for them to not be home to turn the oven on.
There was a time in my life where every single dessert I ate needed to be chocolate. It was chocolate or nothing! I guess I’ve evolved because this recipe is basically the opposite of chocolate. These Lemon Blueberry Poppy Seed Donuts combines the comfort of a donut with the lightness of summer snack. I’m not sure if the makes any sense at all, but that’s how I feel!
They’re perfect on the go, for breakfast or even for dessert! My 7 year old niece even approved them and that’s saying a lot because DANG that girl is picky.
Lemon Blueberry Poppy Seed Donuts
Ingredients
2C Kodiak Cakes All-Purpose Baking Mix
1C Almond Milk
2 Eggs
1/4C Maple Syrup
1 teaspoon Vanilla Extract
1 1/2 teaspoon Baking Powder
Zest and Juice of 1 lemon
1 Tablespoon Poppy Seeds
1C Fresh Blueberries
Instructions
- Pre-heat your oven to 350 degrees
- Transfer your batter to a greased donut pan
- Bake for 15-18 minutes and make sure the edges are a bit golden.
- Transfer to a cooling wrack once they are done!
