Let the record show that I am a chocolate chip pancake girl through and through. When I was younger I wouldn’t even touch pancakes that didn’t have chocolate chips in them. I didn’t even add syrup! Just plain ole’ chocolate chip pancakes was all I wanted. Eventually I snapped out of it but never lost the chocolate fiend inside. That is why these Lemon Poppy Seed Pancakes with Blueberry Sauce recipe is so shocking for me to have made! There’s no chocolate involved and instead I’ve added blueberries which I don’t even like… very confusing!
On a serious note, these Lemon Poppy Seed pancakes are perfect for the Summer. The pancakes themselves are fluffy and cakey. The flavor is great and the blueberry sauce is sweet but kind of tart and really pushes them over the edge.
How to make the Blueberry Sauce
Like I previously said, I don’t like blueberries. I am not a fan of the texture and usually only ever eat them in smoothies. We had some extra in the fridge and I was craving something fruity to go with these pancakes and let me tell you… this sauce is what dreams are made of. To make this sauce all you will do is add the blueberries, lemon juice, sugar and water into a small pot. Allow the blueberries to heat and stir occasionally. Once the blueberries are heated through, turn the heat to low and begin to mash them. Once the sauce begins to thicken, you’re done!
How to make the Pancakes
I made the batter for these pancakes in the blender. I love doing this because when you blend the batter you get a really nice and smooth consistency. It’s also less clean up and you don’t have to worry about potential clumps in your batter! Add the oats first and give them an initial whirl to make more of an oat flour. Add the rest of your ingredients and blend until combined!
Lemon Poppyseed Pancakes with a Blueberry Sauce
- Total Time: 15 Minutes
- Yield: 8–10 Pancakes 1x
Ingredients
1 + 1/2C Oats
1/2C Almond Milk
1 Tbsp Melted Butter
2 eggs
Juice of 1 lemon
Zest of 2 lemons
1 teaspoon vanilla
1 teaspoon Poppy Seeds
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Sauce Ingredients:
1/2C Blueberries
1/2–1 Tbsp Coconut sugar
Juice of 1/2 a lemon
1 Tbsp water
Instructions
- Combine pancake ingredients in blender and blend until smooth
- Cook pancakes whatever size you want on a hot pan greased with butter or Pam spray
- Combine sauce ingredients in a sauce pan and heat until you reach a good liquid consistency, stirring and mashing
- Prep Time: 5 Minutes
- Cook Time: 10 Minutes

How did you get your pancakes so moist and fluffy? Mine turned out dry and kind of hard 🙁 the sauce was great though!
