This Mexican Street Corn is super easy to whip up and so delicious! I love this side dish to go along with a classic BBQ. It’s super refreshing and such a crowd pleaser.
Ingredients
Scale
1 Can of Corn
2 Tbsp Plain Greek Yogurt
1 Tbsp Olive Oil
Juice of 1 Lime
1/4 chopped Red Onion
1/4–1/2 tsp of each (adjust measurements to taste): Salt, pepper, cumin, chili powder, paprika sprinkle on top once everything is mixed
Cotija Cheese – mixed in and on top for garnish
