If you haven’t made banana bread during this quarantine… what the heck else have you been doing?! Honestly, everywhere all over Instagram, people are baking banana bread loaves left and right. My husband actually asked me to stop baking because our freezer was too full! I never thought I’d hear him say that we had too many baked goods in the house. I did pause my baking but only after making this Olive Oil Chocolate Chip Banana Bread. This loaf is my BEST loaf to date.
Baking with olive oil has always freaked me out. Typically, when I think of sweets and baking, I don’t think of olive oil. I connect olive oil with cooking and savory meals. You cannot taste the olive oil flavor, however, the olive oil flavor gives the bread a richer flavor. It’s hard to explain but try it for yourself and see! Make sure you are using “Extra Virgin” olive oil and not simply “Olive Oil”.
What you will need for this Chocolate Chip Banana Bread:
Whole Wheat Flour
Extra Virgin Olive Oil
Optional: Cinnamon Sugar for the top
Make sure to store your banana bread properly or it will go bad quickly! Banana bread should always be kept in plastic wrap, tin foil, or an airtight container to keep it from drying out or going bad. You can also extend the life of your banana bread by refrigerating it. If you don’t think you’ll eat it within a week, you can also freeze your loaf for up to 3 months!Print
This Olive Oil Chocolate Chip Banana Bread is so much better than your typical banana bread. I’m not sure what it is about adding olive oil to baked goods, but it makes it so much better!
1 + 3/4C Whole Wheat Flour
1/3C Extra Virgin Olive Oil
1/4C Maple Syrup
1 teaspoon Baking Soda
1/2 teaspoon Cinnamon
1 teaspoon Vanilla
1/4C almond Milk
1/2C Chocolate Chips
1 teaspoon Cinnamon and 1 Tbsp Coconut Sugar for the topping
- Pre-heat your oven to 350
- Combine your ingredients and mix until combined. Do not overmix!
- Pour into a lined loaf pan & top with your chocolate chips. You can also combine your chocolate chips into the batter, it’s totally up to you!
- If you’re adding the cinnamon sugar topping, sprinkle over the top.
- Bake for 50 minutes. Remove and let cool.
- Prep Time: 15 Minutes
- Cook Time: 50 Minutes
