If we’re being honest… I’ve never been a fan of sugar cookies. But these Paleo Sugar Cookies are way more than the traditional sugar cookie. I replaced regular flour with almond flour which gives the dough a more complex and nutty flavor that is unexpected when eating a sugar cookie. I also added cinnamon and gingersnap spices which really make the flavors come alive! Such a perfect treat for Valentine’s Day.
A traditional sugar cookie is usually decorated with colorful icings, however I’m not a fan of those! I decided to go with a chocolate detail instead because chocolate is my personal favorite. Chocolate makes any dessert more decadent which makes sense for the holiday that I made them for… Valentine’s Day! Valentine’s Day is ALL about chocolate so it only felt right to add some chocolate to these cookies. You can add as little or as much as you want! The addition really compliments the flavor and takes these cookies to the next level.
Besides the fact that these Paleo Sugar Cookies taste delicious, they’re also super low in calorie. When making 24 cookies, it comes out to 85 calories per cookie (not including the chocolate).

This Paleo Sugar Cookie recipe is made up of the most simple ingredients, takes under an hour to make and are absolutely scrumptious. I made these cookies into hearts for Valentine’s Day but with a different cookie cutter or even just making plain ole round cookies, they can be made for any holiday or even just because!
1/4C Maple Syrup
2 Tbsp Coconut oil, softened
1 tsp Vanilla extract
1 tsp Cinnamon
1 tsp Primal Palate Gingersnap
2C Almond flour
1/2C Coconut flour
1 tsp Baking soda
A pinch of sea salt
Optional: Chocolate chips + coconut oil for drizzling or dipping
- Preheat your oven to 350
- Combine your ingredients in a stand mixer or by hand until you have your dough
- Roll your dough into a ball and over with plastic
- Refrigerate for 30 minutes
- After 30 minutes, take your dough out and place on a cool, floured surface
- Use a rolling pin to roll your dough (if the dough sticks to the rolling pin, add more flour)
- Use a cookie cutter to make your shapes and place on a cookie sheet covered in parchment paper
- Bake your cookies for 8-10 minutes
- Let cool and if you want, drizzle/decorate with melted chocolate
- Prep Time: 45 Minutes
- Cook Time: 8-10 minutes
