This Peach Baked Oatmeal is super easy to prepare and is perfect for meal prep! I prepared it in less than 10 minutes and then popped it in the oven for 40 minutes. While it was baking, I was able to prepare the rest of my meal prep! Now that is multi-tasking.
A week ago I bought a box of peaches at Trader Joe’s. I was the only person in my house who was eating them so they started to get soft before I could finish them all! In an effort to avoid food waste, I decided that I NEEDED to bake with what was left! Not only did I make these Peach Baked Oats but I also made Peach Cobbler Muffins (stay tuned, they’re coming soon).
What You Will Need To Make Peach Baked Oatmeal:
Oats
Almond Milk
Cinnamon
Vanilla
Salt
Maple Syrup
Peaches
Collagen (Optional)
I’m a huge overnight oats gal but I also like to switch things up sometimes, especially because I’m not just cooking for myself! I love surprising husband with different recipes and keeping things interesting. Baked oatmeal is great because you can add so many types of fruits and flavors to make it different each and every time you make it.

Ingredients
2C Oats
2.5C Almond Milk
1 Tbsp Cinnamon
1 Tbsp Vanilla
1/2 teaspoon salt
3 Tbsp Maple Syrup
2–3 Peaches (chopped and sliced for the top)
4 scoops Collagen
Instructions
- Combine your ingredients in a large bowl and mix.
- Pour your mixture into a greased baking dish.
- Bake at 375 for 40 minutes.
- Remove, cut and enjoy!
