Peach Cobbler Muffins

Are you a peach cobbler person? Or are you more of a berry crisp person? Before this summer, peach cobbler never really crossed my mind. I didn’t grow up eating it and to be honest I don’t think my mother has ever made it! However, last week I bought a few too many peaches and before I could eat them all, I noticed they began to get a bit soft. In an attempt to salvage as many as I could and not waste any food, I decided I needed to make something with them! Alas… Peach Cobbler Muffins!

These Peach Cobbler Muffins are so sweet and delicious, they can be eaten as breakfast or dessert! Pair with yogurt or ice-cream and enjoy.

I’ve never baked with peaches before so I was kind of nervous at first. Would I enjoy a warm peach?! Turns out I really did! I guess I’ve been missing out all this time because if actual peach cobbler is half as good as these muffins… I’m totally a peach cobbler person! Who friggin knew…

These Peach Cobbler Muffins are so sweet and delicious, they can be eaten as breakfast or dessert! Pair with yogurt or ice-cream and enjoy.

What you will need to make these Peach Cobbler Muffins:

Peaches (about 3-4)

Flour

Eggs

Maple Syrup

Almond Milk

Coconut Oil

Butter

Vanilla Extract

Salt

Baking Powder

Baking Soda

These Peach Cobbler Muffins are so sweet and delicious, they can be eaten as breakfast or dessert! Pair with yogurt or ice-cream and enjoy.

When I gave these muffins to husband the first thing he asked me was “are these cornbread muffins?”…. That initially made me nervous because UH NO, these are not cornbread muffins! But he followed that up with “oh I got a peach” and “these are good”. So, there you have it… husband approved!

Peach Cobbler Muffins

Description

These Peach Cobbler Muffins can honestly be eaten as breakfast or dessert. Warm them up in the morning and eat with yogurt OR warm them up in the evening and eat with ice-cream. Super versatile! 


Ingredients

Scale

1 + 1/2C Flour

2C Peaches

1 Egg

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1/2 teaspoon Salt

1/4C Coconut Oil 

2 Tbsp Melted Butter

3 Tbsp Maple Syrup

1 teaspoon vanilla

1/2C Almond Milk


Instructions

  1. Pre-heat your oven to 350
  2. Combine your ingredients (minus the peaches). Do not over mix!
  3. Fold your chopped peaches in and fill your tin with the batter.
  4. Bake for 18-20 minutes, remove and let cool.
  • Prep Time: 15 Minutes
  • Cook Time: 18-20 Minutes
