These Peanut Butter Banana Muffins were one of the first muffin recipes I created in college. Back when I had no knowledge of baking AT ALL and anything I made tasted good to me simply because I made it! Well years later, I thought these muffins deserved a re-do and some new photos.
These Muffins are ready in under 30 minutes and are the perfect snack for on-the-go throughout the week. They’re also perfect for holding you over from meal-to-meal. That’s mainly what my husband and I use these muffins as. You know the point in the day when you’re hungry for your next meal but it’s just a bit too early to eat that meal? Pop one of these in the microwave for 10 seconds and enjoy a nice treat!
What you will need for these Peanut Butter Banana Muffins:
Flour
Eggs
Maple syrup
Peanut butter
Baking powder
Baking soda
Bananas (ripe)
Vanilla extract
Salt
Chocolate chips (optional but highly recommended)
This recipe comes in at just about 200 calories per muffin. That is the perfect mid-day snack or even after-dinner dessert! Pair with some fruit and yogurt and you even have a hearty breakfast. That’s one of the things I love about baking muffins and having them in the house, you can grab one anytime you want or need. They make the perfect sit down meal/snack/dessert or you can grab one on-the-go.

Ingredients
1.5C Flour
2 Eggs
3 Tbsp Maple Syrup
1/2C Creamy Peanut Butter
1 teaspoon Baking Powder
1 teaspoon Baking Soda
2 Mashed, Ripe Bananas
1 tsp Vanilla Extract
1/2 teaspoon Salt
1/2C Chocolate chips
Instructions
- Combine your wet ingredients and mix until combined.
- Add your dry ingredients to your wet ingredients and mix until just combined. Do not over mix or your muffins will come out very dense.
- Add your chocolate chips and fold in.
- Divide the batter into your cupcake pan, this batter should make 12 cupcake sized muffins.
- Bake at 350 for 18 minutes.
- Let cool and enjoy!
