These Peanut Butter Banana Overnight Oats are a breath of fresh air to my daily meals. I’m usually a plain oats kind of gal. I eat oats everyday at around 9/10AM at work… I’m a creature of habit. But this recipe was such a nice change! The banana sweetens them up without needing to add any type of sugar and it pretty much tastes like banana bread which is such a great way to start the day.
What are overnight oats, you ask?
Instead of making oatmeal on the stove top, all you have to do is mix your ingredients up in a container and refrigerate overnight. By the time morning comes, the oats will have soaked up the almond milk and all the flavor. Just pop into the microwave before eating to eat them warm or just eat them cold! Although these Peanut Butter Banana Bread Overnight Oats can be made on the stove top if you have the time!
The great thing about oats is that they’re so customizable. You can make them any flavor you’d like, mix in any type of fruit you’d like and add any and all kinds of toppings. I’m definitely one to always add nut butter and my favorite types of fruits to add are: Blueberries, strawberries, bananas and apples! Get creative, people!
Do I need to use collagen?
Collagen is on the ingredient list but not necessary to this recipe! If you don’t have or use collagen you can use any type of protein powder to up the protein content in your breakfast.Print
This Peanut Butter Banana Overnight Oats recipe is a delicious healthy breakfast that you can prepare in advance. It’s a great breakfast to prep on a Sunday and it can last all week! Nothing makes me happier than a prepped meal that will make my life easier throughout the week.
1 Ripe banana
1C Rolled oats
1C Unsweetened almond milk
2 Scoops collagen
1 tsp Vanilla extract
1 tsp Cinnamon
2 Tbsp Peanut butter
1 Tbsp Chia seeds
- Mash your banana
- Add in the rest of your ingredients and combine
- Add to a container with a lid
- Refrigerate overnight
