If you ever find yourself reaching for something sweet after dinner, this Peanut Butter Stuffed Dates recipe is for you. Trader Joe’s just started carrying Organic Pitted Dates so when I finally saw them in store, I immediately put them in my cart! I didn’t know what I was going to do with them, but if I hadn’t come up with something scrumptious (like this recipe) I would have just ate them by themselves.
I’ve noticed that people either love dates or they’ve never tried them. I’m not sure I’ve ever met someone who flat out does not like dates. If you’re one of those people, comment below! Dates are honestly nature’s candy and before about two years ago, I had never tried them either. After I made these Peanut Butter Stuffed Dates, I told husband to try one and his immediate answer was “I don’t think I like dates.” My rebuttal was obviously ” have you tried them”? To which he said “no”. Well honey, ain’t no time like the present! I pulled them out of the freezer, handed him one and upon the first bite, his eyes LIT up. Needless to say, husband now likes dates.Β
Other ways to make Peanut Butter Stuffed Dates:
Instead of stuffing the dates with peanut butter you can use:
- Almond Butter
- Coconut Butter
- Sun Butter
- Chocolate!
Instead of dipping in chocolate you can dip them in:
- White Chocolate
- Melted Peanut Butter (for an inside out Peanut Butter Stuffed Date!!!)
- You don’t need to dip them at all!
Instead of just sprinkling with sea salt you can sprinkle them with:
- Chocolate Chips
- Butterscotch Chips
- Crushed Nuts
- Sprinkles
Peanut Butter Stuffed Dates
Description
This recipe is sweet and salty AKA the perfect after diner treat! One thing I love about this recipe is you can really customize it to what you like. Instead of dipping in dark chocolate, you can dip in white. You can skip the dipping in chocolate and sprinkle nuts on top or chocolate chips. The options are endless and whatever you do, they’re going to taste great!
Ingredients
Dates, pitted (you can buy pitted or just remove the pit yourself)
Peanut butter (or any type of nut butter you enjoy)
Chocolate for melting (any type you enjoy)
Course sea salt
Instructions
- Slice open your dates on one side only so you have a nice pocket to stuff the nut butter
- Spoon in your nut butter and place on a sheet pan covered in parchment paper
- Once you’ve stuffed all your dates, freeze for 15-20 minutes
- While your dates are freezing, melt your chocolate. I melted mine in the microwave in 10 second increments
- Once your chocolate is melted, remove the dates from the freezer and begin to dip them
- Place them back on the baking sheet with the parchment paper
- Sprinkle your salt while the chocolate is still melted (note: the chocolate will harden quickly because the dates will be cold)
- Return to the freezer for 10-15 minutes and enjoy!
- Store in the freezer (I cannot tell you how long these will last in the freezer because mine were gone in 3 days, but I assume they can last a while if you have self control)
