Pecan Chicken Salad Sandwich

This Pecan Chicken Salad Sandwich comes together so easy and fast using leftover chicken. The creamy mayo, along with the pecans, help to make this chicken salad so flavorful. My favorite way to eat this chicken salad is on top of a toasted croissant. Don’t forget to add some Revolution Farms Lettuce for some crunchy texture. Sounds crazy but the addition of fresh lettuce really brings this entire sandwich together!

Pecan Chicken Salad Sandwich

Chicken Salad is such an easy and versatile meal. Pair it with a delicious croissant, add it to a lettuce wrap for a low carb option or throw it on top of a salad for a healthy and filling meal! Whichever way you eat it, it’s a meal that never fails.

Pecan Chicken Salad Sandwich with fresh ingredients

Adding the Revolutions Farms Lettuce to this recipe gives the sandwich such a nice crunch that you’re not going to want to skip on! Revolution Farms Lettuce is great because it is coming from Michigan instead of the West Coast and therefore has additional shelf life allowing it to last so much longer! There’s nothing worse than your lettuce going bad in the fridge before you’re able to use it.

Ingredients:

Chicken – I used leftover!

Revolution Farms Deli Leaf Lettuce

Red Grapes

Green Apple

Pecans

Dried Cranberries

Mayo

Lemon

Mustard

Salt & Pepper

Garlic Powder

Croissants

Recipe Swaps:

Chicken – If you don’t have leftover you can make some fresh chicken breasts or thighs or use canned!

Mayo – If mayo isn’t your thing try sour cream or Greek yogurt for a much healthier spin.

Pecans – Try using almonds instead of pecans.

How To Make Chicken Salad:

  1. Chop up the chicken, apple, grapes and pecans and add to a large bowl. Add the cranberries as well.
  2. Make the dressing in a small bowl by combining the mayo, mustard, lemon juice, salt, pepper, and garlic powder.
  3. Toss the ingredients in the dressing.
  4. Slice the croissants in half, layer some crunchy Revolution Farms Lettuce and fill with the chicken salad mixture.

Pecan Chicken Salad Sandwich

Ingredients

1LB Chicken

1/2C Red Grapes, sliced in half

1/2C Green Apple, diced

1/4C Glazed Pecans, crushed

1/4C Dried Cranberries

1/2C Low Fat Mayo

1/2 Lemon, juiced

1Tbsp Mustard

1/2 teaspoon each, Salt & Pepper

1 teaspoon Garlic Powder

4 Croissants, Large


Instructions

  • Chop up the chicken, apple, grapes and pecans and add to a large bowl. Add the cranberries as well.
