Pecan Chicken Salad Sandwich

1LB Chicken

1/2C Red Grapes, sliced in half

1/2C Green Apple, diced

1/4C Glazed Pecans, crushed

1/4C Dried Cranberries

1/2C Low Fat Mayo

1/2 Lemon, juiced

1Tbsp Mustard

1/2 teaspoon each, Salt & Pepper

1 teaspoon Garlic Powder

4 Croissants, Large


  • Chop up the chicken, apple, grapes and pecans and add to a large bowl. Add the cranberries as well.
  • Make the dressing in a small bowl by combining the mayo, mustard, lemon juice, salt, pepper, and garlic powder. 
  • Toss the ingredients in the dressing.
  • Slice the croissants in half, layer some crunchy Revolution Farms Lettuce and fill with the chicken salad mixture.
