Didn’t have time to meal prep? This recipe will take you less than 30 minutes. What’s awesome is you can make this for just yourself or a crowd. Making for 1? Make 1 whole bag of gnocchi and 2 chicken sausages (or the whole package, you do you), eat it all or save half for the next day. Making for a few? Just use more gnocchi bags and buy more sausages, the prep work is the same.

The best way to cook cauliflower gnocchi in my opinion is in a frying pan. Whatever you do, do not listen to the instructions on the package! All you have to do it toss your gnocchi into a heated pan, drizzle some oil and cook until heated through. It’s really THAT easy. Trader Joe’s Cauliflower Gnocchi
Chicken Sausage of your choice
Pesto (jarred or homemade)
- Heat your choice of oil in a pan and add your gnocchi
- While your gnocchi is cooking, slice your chicken sausage into coins
- Add your chicken sausage to the pan once the gnocchi is halfway cooked
- Once the gnocchi is cooked through, add your spinach
- Once your spinach is wilted, add your pesto and toss
- Serve hot and ENJOY
- Prep Time: 5 minutes
- Cook Time: 20 minutes
