These muffins are perfect for breakfast or a snack. They’re completely portable and meal-prepable. These muffins go perfect with a drizzle of nut butter and PRO-TIP, cut in half and toast up before eating… you will not regret it!
Ingredients

3 eggs
1 cup pumpkin
2 cups almond flour
1 teaspoon baking powder
2 Tablespoons coconut oil – melted
2 teaspoons vanilla
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
2 Tablespoons maple syrup
Chocolate chips for the top (you can also mix in with the batter)
Instructions
- Pre-heat your oven to 350
- Grease a muffin tin OR use muffin tin inserts
- Transfer your batter to the muffin tins and bake for 40 minutes
- Let cool before digging in!
