I absolutely love coffee and I also enjoy the occasional PSL… so these oats are right up my alley. You’re either a PSL person, or you’re not. There’s really no in between. This overnight oats recipe is so simple! Honestly, this took me about 5 minutes to prep and I had breakfast for 2 days… how wonderful is that? This is also a perfect breakfast to make if you have some extra pumpkin puree in the fridge. During the fall I feel like I always have 1/2 a can of pumpkin puree in the refrigerator from baking and most of the time if I don’t plan on baking again, I never know what to do with it! I love adding pumpkin to my oats, pancakes, waffles or even coffee in the blender to make my own latte!
Ingredients to make Pumpkin Spice Latte Overnight Oats:
Rolled Oats
Almond Milk
Cold Brew or Coffee
Pumpkin Pie Spice
Collagen

After I made these oats I kind of struggled with what to add on top. Here are a few ideas:
Almond Butter
Crushed Pecans
Whipped Cream (for a true PSL)
Chocolate Chips

Ingredients
1C Rolled Oats
1/2C Cold Brew
1/2C Almond Milk
1 teaspoon Pumpkin Pie Spice
2 Scoops Vanilla Collagen
Instructions
- In a large bowl, combine your ingredients and mix well.
- Add the mixture to a container with a lid and refrigerate overnight.
- Heat up in the morning and enjoy!
