Ooey gooey blondies made with delicious pumpkin and warm spices covered with white chocolate and butterscotch chips.
Although it’s beginning to feel a bit more like winter than Fall, that doesn’t mean we stop baking with pumpkin! These pumpkin blondies are so soft, warm, and delicious. They were a complete hit at my husband’s job plus they were incredibly easy to make.

I don’t usually love white chocolate but I was pleasantly surprised with how much I enjoyed the combination of white chocolate + pumpkin! Add in those butterscotch chips and on man… flavor overload!
How to make Pumpkin Blondies
- Start by preheating your oven to 350 and lining a 9×9 baking pan with parchment paper.
- In a large mixing bowl combine the butter, sugar, egg, vanilla, and pumpkin until well combined.
- Add the flour, baking powder, baking soda, pumpkin pie spice, and salt. Fold in until just combined.
- Fold in 1/2 of the white chocolate chips and 1/2 of the butterscotch chips.
- Add the batter into the pan and spread evenly. Top with the rest of the white chocolate and butterscotch chips.
- Bake for 18-20 minutes and enjoy!
How long do Blondies last?
These blondies will last up to a week in the fridge (if they are not all eaten by then!)
Can I freeze this recipe?
Yes! Wrap well and freeze for up to 3 months before enjoying.
