How to cook a steak in a cast iron skillet
The key to cooking a steak in a cast iron skillet is HEAT. You will want the skillet to be hot enough when you first put your steaks in. In order to achieve the proper heat, you will want to pre-heat your pan on a medium to high flame for about 4 minutes. I heat my skillet with a drizzle of olive oil already in the pan. You will want the pan to be generously covered but you don’t want the steaks to be submerged in olive oil.
While your pan is heating, remove your steaks from their packaging and pat dry. Season on all sides with salt.
Once your skillet is heated, sprinkle some salt in your pan and add your steaks in laying them away from you so that olive oil does not splatter towards you/on you. Cook for 3-4 minutes per side for a medium-rare steak.
Important: do not move your steaks around too much. Add them to the pan and don’t move them until the timer dings!
How long should I cook my steak?
The answer to this question depends on a few things:
- How thick are your steaks?
- What temperature do you like your steaks to be?
My timing (3-4 minutes per side) is based on two 6oz top sirloins and wanting them to be medium-rare. If you’re very unfamiliar with cooking steaks, use a thermometer.
Medium-rare – 135 degrees
Medium – 140 degrees
Medium-well – 145 degrees
Tips for scheduling your cooking
One thing I’ve always struggled with when it comes to cooking for one other person or a group of people is timing. When do I start each part of the meal so that everything finishes at the same time and nothing gets cold? Well I’ve tested this out for you so that you don’t need to worry! Below are the exact steps you’ll need to make a steak dinner for two…
Remove your steaks from the freezer the night before and let thaw in the fridge overnight.
When you’re ready to begin, pre-heat your oven to 400 degrees. The entire active cooking process should take 40 minutes not including the pre-heating of the oven so turn on your oven 50 minutes before you want to serve your meal.
While your oven is pre-heating, prepare your potatoes. Your potatoes should be ready and on your pan by the time the oven is ready. Put your potatoes in the oven and set a timer for 40 minutes.
While your potatoes are cooking…
Set your table and prepare all other ingredients for the dinner. Arrange ingredients on the counter and put your skillet and your frying pan on your preferred burners.
Slice your onion and set aside in a bowl. Clean and dry your cutting board, you will use this to let your steaks rest.
When your potatoes have 25 more minutes on the timer, begin heating your cast iron with olive oil. Remove your steaks from their package, pat them dry and salt them. After your skillet has been heating for about 4 minutes, add your steaks. Cook for your desired amount of time, remove and let rest on your cutting board.
The mushrooms will take 8-10 minutes to cook so begin as soon as you remove your steaks from the pan. Heat your pan with olive oil for about a minute, add your onions and mushrooms, sprinkle with salt and sauté. You’ll want to move them around every minute so they don’t burn. Some mushrooms will release more water than others so keep an eye on them.
By the time your mushrooms are done, your potatoes should also be done and your steaks will be ready to dig in to! You can add everything to their own plates and bowls and arrange on your table family style or plate everything up and serve.
Lastly, pat yourself on the back for a job well done.

PrintRomantic Steak Dinner For Two
- Total Time: 1 Hour
- Yield: 2 Dinners 1x
Ingredients
Red Roasted Potatoes
1LB Red Potatoes
About 1/4C Olive Oil
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Paprika
Mushrooms and Onions
10oz Mushrooms, whatever kind you like
1/2 yellow or white onion
1–2 Tbsp Olive Oil
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/2 teaspoon Garlic Powder
Instructions
Red Roasted Potatoes
- Pre-heat your oven to 400 degrees
- Clean your potatoes and cut them into fourths
- In a large bowl, toss with olive oil and spices
- Cover a baking sheet with foil and spray with non stick spray
- Roast for 40 minutes or until a fork goes through easily
Mushrooms and Onions
- Heat a pan over medium heat with olive oil
- Slice your onion and add to the heated pan
- Wash and slice your mushrooms or purchase already sliced
- Add the mushrooms to the pan and sprinkle with salt, pepper and garlic powder
- Cook for 8-10 minutes
Steaks
- Heat a cast iron skillet over medium-high heat with a generous amount of olive oil to cover the bottom of the skillet. The key to a good sear on your steak is getting the skillet hot enough. You will want to pre-heat your skillet for about 4 minutes.
- Remove your steaks from their packaging and pat dry. Sprinkle the steaks with salt and place steaks in the skillet placing it away from you so that if oil splatters, it does not splatter towards you.
- Let your steak sear, untouched for 3-4 minutes per side depending on your desired temperature (see above directions).
- After flipping the steak, add a tablespoon of butter in the middle so that it melts and reaches both steaks.
- Once the steaks are done, set aside and let rest for 10 minutes.
- Make a plate and enjoy!
Notes
- It’s important to let the steak rest for 10 minutes after removing it from the skillet because it will continue to cook after you remove it from the heat. If you cut into it immediately after removing it from the heat and it still looks more rare than you’d like it, you may end up over cooking it by not allowing it the chance to finish cooking on its own.
- My husband and I like our steaks to be medium rare, for 2 6oz top sirloin steaks, I cooked them for 3 minutes and 30 seconds per side and then let them rest of 10 minutes. Keep in mind, the timing will vary based on thickness of the steak and heat of the pan. If you’re new to cooking steaks in a cast iron, use a thermometer.
- Prep Time: 20 Minutes
