Caesar salad is such a classic and never disappoints! This Brussels Sprouts Chicken Caesar Salad is a fun twist on the traditional dish and is so easy to throw together. It’s packed with a ton of flavor from the dressing to the parmesan and the Lemond zest… the salad will make your tastebuds dance!

Ingredients for Brussel Sprout Caesar salad

Ingredients to make Brussels Sprouts Chicken Caesar Salad:

Shaved Brussels Sprouts – I used the bag of already shaved Brussels Sprouts from Trader Joe’s.

Grilled Chicken – In this recipe I used chicken breast but you can also use chicken thighs. If you have already cooked chicken leftover from another meal, you can use that! If not, simply marinate the thawed chicken with salt, pepper, minced garlic, lemon zest, lemon juice, and a bit of olive oil. Cook on the grill for about 4-5 minutes per side depending on how thick they are.

Caesar Dressing – You can use your favorite Caesar dressing! I used the vegan Caesar dressing from Trader Joe’s.

Lemon – For extra flavor, zest a bit of lemon over the salad and squeeze half of it as well!

Shaved Parmesan – I prefer using shaved in this recipe rather than shredded or grated. It gives the salad some extra texture and makes it feel like a fancy salad you got from a restaurant.

Pistachios – You can find shelled pistachios in the nuts aisle at Trader Joe’s. I used roasted and unsalted but you can also use raw or salted!

Croutons – These were hard to find at Trader Joe’s but eventually I did find them hanging in the aisle by the dressings. You can also make your own croutons at home!

Ingredients

Scale

1 Bag Shaved Brussels Sprouts

Grilled Chicken (about 8oz or 2 medium sized breasts)

Caesar Dressing of your choice

2 Tbsp Shaved Parmesan 

2–4 Tbsp Shelled Pistachios

Croutons

1 Lemon – for zest and juice

Salt, Pepper, Garlic Powder to taste


Instructions

1. If your Brussels are already shaved, simply toss them in a bowl with the dressing, pistachios, Parmesan, croutons, grilled chicken and mix! Finish with some seasoning, lemon zest and lemon juice.

2. If your Brussels are not shaved, wash and shave your Brussels Sprouts and then continue to combine the rest of your ingredients in a large bowl.
