Simple Bacon, Egg, and Potato Breakfast skillet made in just one pan! This recipe is so easy and makes you feel like you’re at your favorite diner.
I’m usually a sweet breakfast person but when husband and I visited Chicago for the first time together, we went to this awesome diner and they had an incredible amount of skillet options. The ingredients ranged from eggs, potatoes, bacon, ham, vegetables and everything in between. Plus they were all cheesy as HELL! We each got one off the menu and left feeling stuffed as heck but in the best way. So obviously I had to make my own, healthier version at home!
This recipe comes together rather quickly, especially if you have leftover potatoes in the fridge. If not, don’t worry! Zap the potatoes in the microwave for 1/2 the amount of time it calls for to fully cook them, chop them up and then add them to the skillet with your peppers and onions to crisp up and finish cooking.
Do the eggs need to be over easy?
No! If you prefer sunny side up, scrambled or over-medium… just adjust the cooking! Instead of cracking the egg on top, covering and allowing it to cook that way, you could crack it in and mix it up for a large scrambled skillet. Feel free to make the eggs however you want them! The recipe will still come out incredibly good.

Ingredients
2 Russet Potatoes
4 Eggs
2–4 Slices of Bacon
1 Green Pepper
1/2 Yellow Onion
1 teaspoon of Garlic Powder, Onion Powder and Salt
1/2 teaspoon Pepper
1/4C Shredded Cheese
Instructions
- Start by cleaning your potatoes and cooking them halfway in the microwave. If you have leftover potatoes, those will do just fine!
- Heat a skillet with oil over medium heat
- Chop up your onion, pepper, and potatoes. Add to the skillet and cook down for about 5 minutes, moving them around so they don’t burn.
- Season with salt, pepper, garlic powder and onion powder.
- Chop your bacon and add to the skillet. Once your bacon is cooked, crack your eggs into the skillet, turn the heat to low, cover and let cook for about 6-8 minutes depending on how cooked your want the eggs.
- With 1 minute left, add the cheese.
- Remove from the heat and top with salsa avocado.
